Hey girl, hey!
So if you read my "About Elle" page, I already warned you that this blog was guaranteed to be all over the place. Fun fact about me is that I love to cook. And do you know know why I love to cook?!... (Say it with me!) BECAUSE IT SAVES MONEY! Yes, think about it! More times than not, when you cook a meal at home, you'll have enough to indulge on for dinner and enough to take to work the next day (if you do it right!). Taking your lunch to work ultimately saves money, because it reduces the temptation to go out and get something to eat.
Do the math with me... Let's say you go out to lunch with your friends or cube-mates 5 times a week at $10.00 a pop. That's $50 a week. Now you may be thinking, "Not too bad for a week's worth of lunch." Well, let me put this a little bit more into perspective: $50 a week equals $200 a month... that's $2,400 a year.. just on lunch! Not to mention those morning Starbucks runs, weeknight dinners, Saturday night hangouts, and Sunday morning brunches. With all that adding up, girl... do you know how stacked you would be if all that money had been thrown into your savings account? (it's never too late though!) So with that being said... girlfriends, do I have a recipe for you!
I ran across this Sautéed Chicken and Spinach recipe by Martha Stewart. Not only is it packed with flavor, it's on the healthier side too (Let's fatten those wallets and slim those waistlines, ladies). If you like the taste of sweet, tangy, dijon-y chicken... then hunty, you're going to looove this dish!
The recipe, basically, only calls for chicken and spinach, but I already had some rice in the pantry so I made an additional side (use what you got boo!!). And to add a little va-va-voom... you can turn up the heat for a romantic dinner by adding a little wine, some soft music, and a candle. Or invite the girls over to partake in this bomb meal you just whipped up. My fiancé and I made a date of it on the patio of our home (so romantic!).
Overall, I give this dish two thumbs up. And guess what?... I only spent a whopping $20! That's a heck of a lot less than eating out... (don'tcha think?). I bought all the ingredients at my local Kroger, since it's conveniently located around the corner from us, and having a Kroger card definitely helped lower the cost! Take a look below at exactly how much I spent for this deliciousness and the best part is... many of the ingredients I can use later for an entirely different recipe (winning!).
